As Darel or anyone who has lived outside of their birth culture knows, there are reasons for certain types of building designs and structures being used. It would seem the point of authenticity is to reveal a part of a culture not seen by non-Guatamalans. Presumably, the purpose is not to put stick builders in their place . Having eaten beans from a Guatamalan stove, I can testify that they work as fine as any Lorenus, Japanese, East Indian or any other fine stove and are amazingly authentic.
