[Cob] lime plaster back splashes

Does anyone have any experience living with a kitchen back-splash (the area
behind the kitchen sink and/or stovetop) that is made of a lime plaster? 

 

We've got about 8 fingers of height between counter and window, and
wondering whether to tile it, or try the lime plaster. 

 

Obviously, it'll be a place that will need cleaning, so we're wondering what
that might be like.
