Cob: cob life - how do they do it?

Well, most of your costs should be up front. And with ANY kind of 
"alternative" building, building out in back of beyond will have the same 
costs.  It may be the tradeoff for no mortgage.

Of course some people borrow--with or without an agreement--their land, use 
composting toilets, trot down to the spring for water, worry about getting 
electricity, a septic tank, etc. later. (I own my land, have a few other 
things from the list.) And I know a couple of people who got tired of the 
trailer, no bedrooms, etc. and GOT the loan.  One owns a rental unit 
somewhere, the other just got a loan, after jumping through zillions of 
hoops.

Check the price on a "lot" near a city for a comparison.

seem like it would cost a fortune? Like where do these people find solar 
panels, while maintaining their budget? What about water filtering, septic, 
lights, you know...? Is it as simple as they say, or does it really take a
