Problems in houses don't differ much from problems in people. They are just symtoms. If your walls are sound, look good and you are doing the right thing, then never mind the cracks. I promise you I have never paid attention to anything like you describe in a cob wall, it could be that such cracks have never occurred or that I've never cared for them. Plasters shouldn't crack, if they do you are doing something wrong, add more straw or more sand or both. But a capilar crack (a hair's width) in a wall wouldn't worry me much.
